  1. Preheat oven gas 4 or 180c, grease and line a 7 inch cake tin.
  2. Toss the prepared apple in the lemon juice and set aside.
  3. Sift flour and baking powder, then rub in butter until mixture is like breadcrumbs.
  4. Stir only 115g of the sugar, the apple and the beaten egg. Mix well, adding the milk a little at a time until you have a soft doughy mix.
  5. Transfer to tin, mix remaining sugar and the cinnamon together and sprinkle over the cake mix. (I have tried experimenting by adding mixed spice and another time a few mixed chopped nuts).
  6. Bake for 45-50 minutes, leave to cool for 15 minutes then transfer to a cooling rack. This is soooooo nice warmed with custard . ENJOY.
